It's 30 degrees. The idea of a bowl of steaming broth seems completely absurd, and yet the body still craves minerals and protein. So we turned the question around: what if we served the broth cold, poured directly onto the plate? 🌞
Inspired by Japanese ochazuke, this recipe takes just a few minutes to make using leftover rice. It’s refreshing, thirst-quenching, and ready before you even start to feel hungry.
Because the heat doesn't put our needs on hold—quite the opposite:
And when served cold, the broth reveals another side: cleaner, saltier—almost like dashi.

The steps:
1️⃣ First, assemble the base: place the cooled rice at the bottom of a shallow bowl, then arrange the flaked salmon on top.
2️⃣ Season the broth while it's still cold, in a pitcher: soy sauce, sesame oil, grated ginger, and lemon zest. Mix well.
3️⃣ Slowly pour the cold broth over the rice and salmon. It seeps between the grains, infusing everything with flavor without ever making it too heavy.
4️⃣ Finish with the dill sprigs and enjoy right away, while it's still fresh.
This is the ultimate recipe for using up leftovers: some leftover rice, a piece of fish from the day before, and the dish is ready. You can also add a few slices of cucumber or radish for some crunch, or replace the salmon with shredded chicken.
