Vegetable broth made from vegetable peels: the zero-waste recipe that turns our leftovers into a treasure

We peel the carrots, peel the onions, trim the leeks… and it all ends up in the trash. An automatic, almost imperceptible gesture. But what if these scraps still had something to offer us? 🥕

Spoiler: Yes. With a little water, a pinch of salt, and some time, they turn into a homemade vegetable broth that’s incredibly flavorful and 100% zero-waste.

Why make broth with vegetable scraps?

Because it's the kind of small gesture that checks all the boxes:

  • Reducing waste: We're finding new uses for things we used to throw away without a second thought, just like our grandmothers did.
  • Economical: The base for the broth literally costs nothing.
  • It's simple: three ingredients, a saucepan, and the stove does the rest.
  • Full of flavor: the peels contain much of the vegetables' aroma.

Just one piece of advice: choose high-quality, organic vegetables. Since you're keeping the skin on, it might as well be the best it can be.

The recipe

Ingredients:

  • The peels from our vegetables (carrots, onions, leeks, celery, zucchini, etc.)
  • Water—just enough to cover them
  • A little salt

The steps:

1️⃣ Collect the vegetable peels—after rinsing them thoroughly—and place them in a large pot.

2️⃣ Cover with water and add a little salt.

3️⃣ Bring to a simmer, then let it simmer gently for about 1 hour.

4️⃣ Strain it, and there you go! A golden, fragrant broth, ready to be enjoyed or stored.

How do I use it?

That's where the magic happens, because this broth goes with everything:

  • To take your risotto to the next level, replace the cooking water with this homemade broth.
