Anti-waste tip: homemade chicken broth and gyozas

What if your homemade broth could become the basis for two different meals? With its long, gentle cooking, chicken broth doesn't just provide warmth and nutrients: it also becomes a formidable anti-waste tool.

Today, we're sharing a simple tip for smart, zero-waste cooking, without sacrificing taste or benefits.

Step 1: a collagen-rich broth

Simmer a chicken with your vegetables and a dash of cider vinegar for 4 to 6 hours. This little secret extracts maximum collagen and minerals from the bones. The result: a concentrated, comforting broth packed with benefits for your joints, skin and digestion.

Step 2: recycle meat into homemade gyozas

Don't throw chicken meat away! It's perfect for stuffing into delicious gyozas. Mix it with Chinese cabbage, ginger and chives, or adapt it to the vegetables available in your fridge.

For homemade ravioli pasta :

  • Mix 200 g flour with a pinch of salt.
  • Gradually add 100 ml warm water.
  • Knead for 10 minutes, leave to rest for 30 minutes under a damp cloth.
  • Spread, cut out and garnish your gyozas.

Step 3: Serve and enjoy

Cook your gyozas in a frying pan, then serve them in a bowl of hot broth with a few crunchy vegetables.
A complete, balanced meal, with zero waste!

Why do we love it?

  • Eco-responsible: nothing is lost, everything is transformed.
  • Nourishing: collagen, minerals, proteins and fibers.
  • Convivial: a broth that transforms into a festive meal.
