Pork broth with ginger: the comforting winter remedy

When winter sets in, colds start to appear and energy levels drop... nothing beats a good bowl of hot broth. This ginger pork broth, inspired by Jennifer Hart-Smith, is an ultra-nourishing, meaty recipe, perfect for supporting the immunity of the whole family - young and old.

It combines everything we love: collagen for skin and joints, spices to warm the body and stimulate digestion, and a texture rich enough to make it a truly complete dish.

The benefits of a complete broth

This broth is much more than just a hot liquid. Thanks to the richness of the pork (especially the loin), it contains a good dose of protein, gelatin and healthy fats. We add simple yet powerful ingredients: garlic, ginger, mustard seeds... A true winter potion.

Ingredients:

  • 1 kg pork loin (organic if possible)
  • 3 to 4 L of water
  • 2 onions
  • 5 cm grated fresh ginger
  • 2 garlic cloves
  • 2 tbsp. mustard seeds
  • 2 leeks
  • 3 stalks celery
  • A few sprigs of parsley or coriander to serve

Preparation steps :

  1. Blanch the meat: Place the loin in a large saucepan, cover with cold water and bring to the boil. Skim off foam. Filter and set meat aside.
  2. Brown the herbs: In a Dutch oven, sauté the onions, finely chopped ginger and garlic. Add the loin and brown.
  3. Spice: Add mustard seeds and mix well.
  4. Simmer gently: Pour in the water, partially cover, and simmer for 1h30.
  5. Add vegetables: Add sliced leek and celery, and continue cooking until meat falls away.
  6. Finish: Serve piping hot with freshly chopped herbs.
