Ingredients:
- 2 organic chicken fillets (or leftover cooked chicken)
- 1 can coconut milk (400 ml)
- 1 jar Mon Bouillon chicken + curcuma broth
- 200 g fresh spinach
- 1 onion
- 2 garlic cloves
- 1 tablespoon yellow curry paste
- 3 cm fresh ginger
- 1 tablespoon coconut or olive oil
- Salt and pepper
- Juice of 1 lime
- Fresh coriander (optional)
Preparation:
- Sauté minced onion in hot oil. Add the garlic and grated ginger.
- Stir in the chopped chicken and brown in the curry paste.
- Pour in the hot broth and coconut milk, then simmer for 15 minutes.
- Add the spinach and leave to wilt.
- Season with salt and pepper, lime juice and a few coriander leaves.
