Comforting broth with chicken, coconut milk & spinach

Ingredients:

  • 2 organic chicken fillets (or leftover cooked chicken)
  • 1 can coconut milk (400 ml)
  • 1 jar Mon Bouillon chicken + curcuma broth
  • 200 g fresh spinach
  • 1 onion
  • 2 garlic cloves
  • 1 tablespoon yellow curry paste
  • 3 cm fresh ginger
  • 1 tablespoon coconut or olive oil
  • Salt and pepper
  • Juice of 1 lime
  • Fresh coriander (optional)

Preparation:

  1. Sauté minced onion in hot oil. Add the garlic and grated ginger.
  2. Stir in the chopped chicken and brown in the curry paste.
  3. Pour in the hot broth and coconut milk, then simmer for 15 minutes.
  4. Add the spinach and leave to wilt.
  5. Season with salt and pepper, lime juice and a few coriander leaves.
