Ingredients (for 2 generous bowls) :

  • 500 ml chicken stock
  • 200 g soba noodles
  • 1 cooked chicken breast, shredded
  • 2 hard-boiled eggs
  • 1 spring onion
  • Fresh coriander or chives
  • 1 tablespoon soy sauce
  • 1 teaspoon mirin (optional)
  • 1/2 teaspoon sesame oil
  • Toppings: sesame seeds, chilli flakes

Preparation:

  1. Heat the stock with the soy sauce, mirin and sesame oil.
  2. Meanwhile, cook the soba noodles and rinse in cold water.
  3. Divide the noodles between two bowls, add the chicken, then pour in the hot broth.
  4. Arrange the chopped eggs, chopped spring onion, fresh herbs and toppings.
