Ingredients (for 4 generous bowls)
- 1 jar Mon Bouillon beef broth
- 3 diced carrots (or zucchinis if you have them)
- 1 tablespoon olive oil
- 1 tsp. tomato paste
- 250 g dry tortellini (vegetable or cheese)
- Salt and pepper to taste
- Fresh parsley (optional)
Preparation
- Quickly sauté the carrots in the olive oil.
- Add the tomato paste and stir.
- Pour in the hot broth and bring to a simmer.
- Add the tortellini and cook for the time indicated on the packet.
- Season to taste, adding fresh parsley if desired, and serve piping hot.
