Express carrot & tortellini soup with beef broth

  • 1 jar Mon Bouillon beef broth
  • 3 diced carrots (or zucchinis if you have them)
  • 1 tablespoon olive oil
  • 1 tsp. tomato paste
  • 250 g dry tortellini (vegetable or cheese)
  • Salt and pepper to taste
  • Fresh parsley (optional)

Preparation

  1. Quickly sauté the carrots in the olive oil.
  2. Add the tomato paste and stir.
  3. Pour in the hot broth and bring to a simmer.
  4. Add the tortellini and cook for the time indicated on the packet.
  5. Season to taste, adding fresh parsley if desired, and serve piping hot.
