Butternut soup with chicken broth: a concentrate of love and collagen

This is no mere velouté... it's a real comfort potion!


Here, no water, no cream - just collagen-rich chicken broth and roasted butternut for silky texture and deep flavor.
A dish that nourishes body, heart... and soul.

Ingredients (for 4 bowls)

  • 1 butternut, cubed
  • 2 garlic cloves
  • A few sage leaves
  • 1 drizzle of olive oil
  • Salt and pepper
  • 1 jar Mon Bouillon chicken stock
  • 1 tablespoon homemade pistou (or @jeya.pistous 🥰)
  • Roasted hazelnuts (optional)

Preparation

  1. Roast the butternut: place the cubes on a baking tray, drizzle with olive oil, season with salt and pepper, and add the garlic and sage.
    → 30 minutes at 200°C, until golden and melting.
  2. Blend: add the hot stock and blend until smooth and velvety.
  3. To finish, stir in the pistou and sprinkle with roasted hazelnuts.
