A fun and comforting recipe for tortellini in chicken broth, ready in just a few minutes for Wednesday lunch.
Wednesday at 12:15 p.m. The kids come home from school ravenous, and we have exactly fifteen minutes. There’s no time to cook an elaborate meal, but we’re not about to compromise on quality either. What if the solution were a bowl of piping hot chicken broth, a few tortellini, and a little game?
Chicken bone broth is much more than just a soup base. It’s packed with health benefits that kids consume without even realizing it:
And the best part? We turn this nutritional treasure into a game. The peas and vegetable pieces become "little fish" to catch. The result: kids eat their vegetables while having fun.
1️⃣ Heat the chicken broth in a saucepan over medium heat.
2️⃣ Add the tortellini and let them cook until they float to the surface. That’s a sign they’re ready!
3️⃣ Add the "little fish": peas, carrot rounds, and corn. Let it cook for another minute or two until everything is nice and hot.
4️⃣ Pour into a pretty bowl.
5️⃣ Finish with a generous handful of grated Parmesan on top.
You can switch up the "little fish" depending on the season and what you're in the mood for: baby broccoli florets, sliced mushrooms, spinach... The idea is that each bowl becomes a different playground. And between us, parents get to play too. This bowl is just as comforting at age 35 as it is at age 5.
It's hot, fast, filling, and honestly a lot of fun. The perfect, hassle-free Wednesday lunch.
